How to make Dubai Chocolate Bar at Home

The Dubai Chocolate Bar, a delightful fusion of Middle Eastern flavors and rich chocolate, has captivated dessert enthusiasts worldwide. Notably, originating from Dubai’s Fix Dessert Chocolatier, this treat combines crispy kataifi pastry with a luscious pistachio and tahini filling, all encased in smooth chocolate. Although the original is exclusive to Dubai, you can recreate this indulgence at home with the following recipe.

Ingredients:

  • Kataifi Pastry: 200g, available at Middle Eastern or Mediterranean grocery stores.
  • Butter: 100g, melted.
  • Pistachio Paste: 100g.
  • Tahini: 2 tablespoons.
  • Salt: A pinch, to balance sweetness.
  • Dark or Milk Chocolate: 400g, melted.
  • Coconut Oil: 1 tablespoon, to aid in chocolate melting.

Instructions:

Prepare the Kataifi Pastry:

First, preheat your oven to 180°C (350°F).
Next, gently separate the kataifi strands to prevent clumping.
Then, toss the strands with melted butter until evenly coated.
Spread the pastry on a baking tray and bake for 20–25 minutes, stirring occasionally, until golden and crispy.
Once finished, allow it to cool completely.

Make the Filling:

Meanwhile, in a bowl, combine the pistachio paste, tahini, and a pinch of salt.
After the kataifi has cooled, mix it into the pistachio-tahini blend until well incorporated.

Prepare the Chocolate Shell:

At this stage, melt the chocolate along with the coconut oil until smooth.
Using chocolate molds, pour a layer of melted chocolate to coat the bottom and sides.
Then, allow this layer to set slightly.

Assemble the Bars:

Next, fill the chocolate-coated molds with the kataifi-pistachio mixture, pressing gently to ensure it’s compact.
Pour additional melted chocolate over the filling to seal the bars.
Afterward, smooth the tops and refrigerate until fully set.

Unmold and Enjoy:

Finally, once set, carefully remove the chocolate bars from the molds.
Store them in an airtight container at room temperature or in the refrigerator, depending on your climate.

  • Chocolate Choice: Dark chocolate offers a rich contrast to the sweet filling, but milk chocolate provides a sweeter profile. Choose based on your preference.

  • Ingredient Sourcing: If pistachio paste is unavailable, consider using Biscoff spread as an alternative for a different yet delightful flavor.
