Ingredients:

  • 1 cup (250g) creamy peanut butter (regular, not low-fat or overly natural)
  • 1 cup (200g) granulated sugar or coconut sugar
  • 1 large egg

Instructions:

  1. Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the peanut butter, sugar, and egg.
  2. Beat the mixture vigorously with a spatula for approximately 60 seconds until the batter transforms into a stiff, matte dough that pulls away from the sides of the bowl.
  3. Scoop rounded tablespoons of dough (about 1 inch in diameter) and roll them into smooth spheres. Place them 2 inches apart on a parchment-lined baking sheet.
  4. Use the tines of a fork to press a criss-cross pattern into each ball, flattening the dough evenly.
  5. Bake in the center rack for 8 to 10 minutes until the edges are golden and the surface is set.
