Ingredients:
- 3 cups (450g) shredded chicken breast, chilled and cooked
- 1/2 cup (115g) mayonnaise
- 2 stalks (60g) celery, finely diced
- 1/4 cup (40g) red onion, minced
- 1 tbsp (15ml) lemon juice
Instructions:
- Dice the celery and red onion into uniform, small pieces and shred the cooked chicken breast by hand into bite-sized pieces.
- In a large mixing bowl, whisk together the mayonnaise and lemon juice until the mixture is smooth. Mix for 1 minute until velvety.
- Add the shredded chicken, diced celery, and minced onion to the bowl.
- Gently fold the ingredients together with a spatula until evenly coated. Fold for 2 mins until no white streaks remain.
- Taste for seasoning and add a pinch of salt or black pepper if you've got them on hand.
- Transfer the salad to a chilled container.
- Refrigerate for at least 30 minutes to let the flavors meld. Chill until the bowl feels cold to the touch.
