Ingredients:

  • 1.5 lb sirloin steak, cut into 1-inch cubes
  • 1 tbsp avocado oil
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 1 tbsp toasted sesame oil
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/4 tsp crushed red pepper flakes
  • 2 tbsp toasted sesame seeds
  • 2 stalks green onions, thinly sliced

Instructions:

  1. Whisk together the soy sauce, honey, sesame oil, garlic, ginger, and red pepper flakes in a small bowl until the honey is fully integrated.
  2. Pat the steak cubes dry with a paper towel. Note: Wet meat steams instead of searing.
  3. Toss the steak in the marinade and let it sit for 5 minutes while you heat the pan.
  4. Place a 12 inch cast iron skillet over medium high heat and add the avocado oil.
  5. Wait until the oil shimmers and begins to smoke before adding the beef.
  6. Add steak bites in a single layer, working in batches if the pan is too full.
  7. Press the meat down slightly and sear without moving for 2 minutes until a deep mahogany colored crust forms.
  8. Flip the steak bites and cook for another 2 minutes.
  9. Pour any remaining marinade into the pan. Stir constantly for 60–90 seconds as the sauce bubbles and reduces into a velvety glaze.
  10. Remove from heat immediately and garnish with toasted sesame seeds and sliced green onions.
