Ingredients:
- 3 large very overripe bananas (approx. 400g)
- 1/2 cup (115g) unsalted butter, melted and cooled
- 1/2 cup (100g) granulated white sugar
- 1/2 cup (100g) packed light brown sugar
- 1 large room-temperature egg, lightly beaten
- 1 tsp pure vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1/2 tsp ground cinnamon
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (180°C) and line a 9x5 inch (23x13 cm) loaf pan with parchment paper, creating a sling for easy removal.
- In a large mixing bowl, mash the 3 overripe bananas until they reach a liquid consistency with only small lumps remaining.
- Whisk the melted butter into the mashed bananas, followed by the granulated sugar, light brown sugar, beaten egg, and vanilla extract. Whisk vigorously until the mixture is fully emulsified.
- Sprinkle the 1 tsp baking soda and 1/2 tsp sea salt over the wet mix and stir well.
- Gently fold in the 190g of all purpose flour. Stop the moment you see no more white streaks.
- Toss in 3/4 of the 170g chocolate chips. Fold just once or twice to distribute.
- Pour the batter into the pan. Sprinkle the remaining chocolate chips on top. Bake for 60 minutes.
- Insert a toothpick; it should come out clean or with a few moist crumbs. The top should be deep brown and slightly springy.
- Let it cool in the pan for 10 minutes, then lift it out. Wait at least 20 minutes before slicing to let the crumb set.
