Ingredients:

  • 1 lb boneless skinless chicken breasts
  • 2 cups water or chicken broth
  • 1 tsp salt
  • ½ tsp black peppercorns
  • 1 cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 3 stalks celery, finely diced
  • ¼ cup red onion, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp sweet relish

Instructions:

  1. Place the chicken breasts in a medium pot and cover with water or broth. Add salt and peppercorns. Bring to a gentle simmer over medium heat for 12–15 minutes until the chicken is opaque throughout. Remove and let cool completely on a plate.
  2. In a large mixing bowl, combine the mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and pepper. Whisk vigorously until the mixture is smooth and velvety.
  3. Dice or shred the cooled chicken into bite-sized pieces and add them to the bowl along with the diced celery, red onion, parsley, and relish. Using a rubber spatula, gently fold the ingredients together until combined.
