Ingredients:
- 1 lb boneless skinless chicken breasts
- 2 cups water or chicken broth
- 1 tsp salt
- ½ tsp black peppercorns
- 1 cup mayonnaise
- 1 tbsp fresh lemon juice
- 1 tbsp Dijon mustard
- ½ tsp garlic powder
- ¼ tsp salt
- ¼ tsp ground black pepper
- 3 stalks celery, finely diced
- ¼ cup red onion, minced
- 2 tbsp fresh parsley, chopped
- 1 tbsp sweet relish
Instructions:
- Place the chicken breasts in a medium pot and cover with water or broth. Add salt and peppercorns. Bring to a gentle simmer over medium heat for 12–15 minutes until the chicken is opaque throughout. Remove and let cool completely on a plate.
- In a large mixing bowl, combine the mayonnaise, lemon juice, Dijon mustard, garlic powder, salt, and pepper. Whisk vigorously until the mixture is smooth and velvety.
- Dice or shred the cooled chicken into bite-sized pieces and add them to the bowl along with the diced celery, red onion, parsley, and relish. Using a rubber spatula, gently fold the ingredients together until combined.
