Ingredients:

  • 16 oz (450g) low-fat cottage cheese
  • 3 large (150g) eggs
  • 1/3 cup (80ml) pure maple syrup
  • 1 tsp (5ml) vanilla extract
  • 1 cup (90g) oat flour
  • 1 tsp (5g) baking powder
  • 1/2 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) salt
  • 1 1/2 cups (225g) fresh blueberries

Instructions:

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8x8 inch baking dish with coconut oil or line it with parchment paper.
  2. Combine cottage cheese, eggs, maple syrup, vanilla, oat flour, baking powder, cinnamon, and salt in a high-speed blender or food processor.
  3. Process on high for 30–60 seconds until the batter is completely smooth and no cottage cheese curds remain.
  4. Pour the smooth batter into the prepared baking dish.
  5. Gently fold in the fresh blueberries using a spatula, taking care not to overmix.
  6. Bake for 35–40 minutes until the center is set and the edges are pale golden brown.
  7. Allow the bake to cool completely to firm up before slicing.
