Ingredients:
- 16 oz (450g) low-fat cottage cheese
- 3 large (150g) eggs
- 1/3 cup (80ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
- 1 cup (90g) oat flour
- 1 tsp (5g) baking powder
- 1/2 tsp (2g) ground cinnamon
- 1/4 tsp (1g) salt
- 1 1/2 cups (225g) fresh blueberries
Instructions:
- Preheat your oven to 350°F (175°C). Lightly grease an 8x8 inch baking dish with coconut oil or line it with parchment paper.
- Combine cottage cheese, eggs, maple syrup, vanilla, oat flour, baking powder, cinnamon, and salt in a high-speed blender or food processor.
- Process on high for 30–60 seconds until the batter is completely smooth and no cottage cheese curds remain.
- Pour the smooth batter into the prepared baking dish.
- Gently fold in the fresh blueberries using a spatula, taking care not to overmix.
- Bake for 35–40 minutes until the center is set and the edges are pale golden brown.
- Allow the bake to cool completely to firm up before slicing.
