Ingredients:

  • 29 oz (828g) canned sliced peaches, drained
  • 1/2 cup reserved peach syrup
  • 1/2 cup (100g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 3 tbsp (24g) cornstarch
  • 2 tbsp (30ml) cold water
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) ground nutmeg
  • 1 tsp (5ml) pure vanilla extract
  • 1/4 tsp (1.5g) salt

Instructions:

  1. Pour the canned peaches into a colander, using a slotted spoon to transfer slices into a mixing bowl. Measure out exactly 1/2 cup (120ml) of the syrup and discard the remaining liquid.
  2. In a saucepan over medium heat, combine the reserved syrup, granulated sugar, cinnamon, nutmeg, and salt. Stir constantly until the sugar dissolves and the mixture begins to bubble.
  3. Whisk the cornstarch and cold water in a small bowl until smooth. Slowly pour this slurry into the simmering syrup, stirring vigorously for 1–2 minutes until the liquid becomes a clear, mahogany-colored glaze.
  4. Gently fold in the drained peach slices and lemon juice. Remove from heat immediately and stir in the vanilla extract until the filling is glossy.
