Ingredients:
- 29 oz (828g) canned sliced peaches, drained
- 1/2 cup reserved peach syrup
- 1/2 cup (100g) granulated sugar
- 1 tbsp (15ml) lemon juice
- 3 tbsp (24g) cornstarch
- 2 tbsp (30ml) cold water
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1g) ground nutmeg
- 1 tsp (5ml) pure vanilla extract
- 1/4 tsp (1.5g) salt
Instructions:
- Pour the canned peaches into a colander, using a slotted spoon to transfer slices into a mixing bowl. Measure out exactly 1/2 cup (120ml) of the syrup and discard the remaining liquid.
- In a saucepan over medium heat, combine the reserved syrup, granulated sugar, cinnamon, nutmeg, and salt. Stir constantly until the sugar dissolves and the mixture begins to bubble.
- Whisk the cornstarch and cold water in a small bowl until smooth. Slowly pour this slurry into the simmering syrup, stirring vigorously for 1–2 minutes until the liquid becomes a clear, mahogany-colored glaze.
- Gently fold in the drained peach slices and lemon juice. Remove from heat immediately and stir in the vanilla extract until the filling is glossy.
