Ingredients:

  • 320g all-purpose flour
  • 225g unsalted butter, chilled and cubed
  • 15g granulated sugar
  • 5g sea salt
  • 90ml ice water
  • 1.2kg fresh apples, peeled and sliced (Granny Smith and Honeycrisp)
  • 100g brown sugar, packed
  • 50g granulated sugar
  • 25g all-purpose flour
  • 8g ground cinnamon
  • 1g ground nutmeg
  • 15ml lemon juice
  • 1 large egg
  • 15ml water

Instructions:

  1. In a large bowl, whisk 320g flour, 15g sugar, and 5g salt. Add cold butter cubes (frozen for 10 minutes) and use a pastry cutter to incorporate until the mixture resembles coarse crumbs with pea-sized bits of butter.
  2. Drizzle ice water into the flour mixture one tablespoon at a time, stirring with a fork until the dough begins to clump. Divide into two discs, wrap in plastic, and chill for at least 30 minutes.
  3. Peel, core, and slice apples to a uniform 6mm thickness. In a large bowl, toss the apples with brown sugar, 50g granulated sugar, 25g flour, cinnamon, nutmeg, and lemon juice.
  4. Roll out one disc of dough and line a 9-inch pie dish. Fill with the apple mixture. Roll out the second disc and place over the top, crimping the edges to seal. Cut slits for steam.
  5. Brush the top with an egg wash (1 egg beaten with 15ml water). Place the pie on a baking sheet.
  6. Bake in a preheated oven until the crust is golden brown and the filling is bubbling, approximately 50 minutes.
