Ingredients:
- 320g all-purpose flour
- 225g unsalted butter, chilled and cubed
- 15g granulated sugar
- 5g sea salt
- 90ml ice water
- 1.2kg fresh apples, peeled and sliced (Granny Smith and Honeycrisp)
- 100g brown sugar, packed
- 50g granulated sugar
- 25g all-purpose flour
- 8g ground cinnamon
- 1g ground nutmeg
- 15ml lemon juice
- 1 large egg
- 15ml water
Instructions:
- In a large bowl, whisk 320g flour, 15g sugar, and 5g salt. Add cold butter cubes (frozen for 10 minutes) and use a pastry cutter to incorporate until the mixture resembles coarse crumbs with pea-sized bits of butter.
- Drizzle ice water into the flour mixture one tablespoon at a time, stirring with a fork until the dough begins to clump. Divide into two discs, wrap in plastic, and chill for at least 30 minutes.
- Peel, core, and slice apples to a uniform 6mm thickness. In a large bowl, toss the apples with brown sugar, 50g granulated sugar, 25g flour, cinnamon, nutmeg, and lemon juice.
- Roll out one disc of dough and line a 9-inch pie dish. Fill with the apple mixture. Roll out the second disc and place over the top, crimping the edges to seal. Cut slits for steam.
- Brush the top with an egg wash (1 egg beaten with 15ml water). Place the pie on a baking sheet.
- Bake in a preheated oven until the crust is golden brown and the filling is bubbling, approximately 50 minutes.
