Ingredients:
- 1 cup (225g) cottage cheese
- 2 large (100g) eggs
- 1/2 cup (45g) unsweetened cocoa powder
- 1/2 cup (115g) semi-sweet chocolate chips
- 1 tsp (5ml) vanilla extract
- 1/2 cup (100g) coconut sugar
- 1/4 tsp (1.5g) salt
- 1/4 tsp (1.2g) baking soda
Instructions:
- Place the cottage cheese, eggs, and vanilla extract into your blender. Process on high for 45-60 seconds until the mixture is completely smooth and resembles a thick, pale cream.
- Add the cocoa powder, sugar, salt, and baking soda to the blender. Pulse until the batter is dark, glossy, and fully combined.
- Fold in half of the chocolate chips using a spatula, ensuring they are distributed but not over-blended.
- Pour the batter into a parchment-lined 8x8 inch baking pan and smooth the top.
- Sprinkle the remaining chocolate chips across the surface.
- Bake at 350°F (175°C) for 22-25 minutes until the edges are firm and a toothpick inserted in the center comes out with a few moist crumbs.
