Ingredients:

  • 1 cup (225g) cottage cheese
  • 2 large (100g) eggs
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 cup (115g) semi-sweet chocolate chips
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (100g) coconut sugar
  • 1/4 tsp (1.5g) salt
  • 1/4 tsp (1.2g) baking soda

Instructions:

  1. Place the cottage cheese, eggs, and vanilla extract into your blender. Process on high for 45-60 seconds until the mixture is completely smooth and resembles a thick, pale cream.
  2. Add the cocoa powder, sugar, salt, and baking soda to the blender. Pulse until the batter is dark, glossy, and fully combined.
  3. Fold in half of the chocolate chips using a spatula, ensuring they are distributed but not over-blended.
  4. Pour the batter into a parchment-lined 8x8 inch baking pan and smooth the top.
  5. Sprinkle the remaining chocolate chips across the surface.
  6. Bake at 350°F (175°C) for 22-25 minutes until the edges are firm and a toothpick inserted in the center comes out with a few moist crumbs.
