Ingredients:
- 1 cup (225g) low-fat cottage cheese
- 1/2 cup (56g) shredded mozzarella cheese
- 1/4 cup (28g) grated Parmesan cheese
- 3 tbsp (45ml) marinara sauce
- 1/2 tsp (2.5g) garlic powder
- 1/2 tsp (1g) dried oregano
- 1 pinch (0.5g) salt
- 1 pinch (0.5g) black pepper
- 20g chopped pepperoni
- 1 tbsp (15g) diced green bell pepper
- 1 tsp (5g) fresh basil
Instructions:
- In a small mixing bowl or blender, combine the cottage cheese, Parmesan cheese, garlic powder, oregano, salt, and pepper. Stir until evenly distributed.
- Pour the seasoned cottage cheese mixture into an 8 oz microwave-safe bowl or oven-safe ramekin and smooth the top with a spoon.
- Spoon the marinara sauce over the cottage cheese base and spread it to the edges.
- Sprinkle the shredded mozzarella evenly over the sauce, then press the chopped pepperoni and bell peppers into the cheese.
- Cook using one of three methods: Microwave in 45-second bursts until bubbly (90-120 seconds total); Air Fry at 350°F (175°C) for 8-10 minutes; or Bake at 400°F (200°C) for 12-15 minutes until the top is golden brown.
- Garnish with fresh basil or parsley before serving.
