Ingredients:

  • 1 cup (225g) low-fat cottage cheese
  • 1/2 cup (56g) shredded mozzarella cheese
  • 1/4 cup (28g) grated Parmesan cheese
  • 3 tbsp (45ml) marinara sauce
  • 1/2 tsp (2.5g) garlic powder
  • 1/2 tsp (1g) dried oregano
  • 1 pinch (0.5g) salt
  • 1 pinch (0.5g) black pepper
  • 20g chopped pepperoni
  • 1 tbsp (15g) diced green bell pepper
  • 1 tsp (5g) fresh basil

Instructions:

  1. In a small mixing bowl or blender, combine the cottage cheese, Parmesan cheese, garlic powder, oregano, salt, and pepper. Stir until evenly distributed.
  2. Pour the seasoned cottage cheese mixture into an 8 oz microwave-safe bowl or oven-safe ramekin and smooth the top with a spoon.
  3. Spoon the marinara sauce over the cottage cheese base and spread it to the edges.
  4. Sprinkle the shredded mozzarella evenly over the sauce, then press the chopped pepperoni and bell peppers into the cheese.
  5. Cook using one of three methods: Microwave in 45-second bursts until bubbly (90-120 seconds total); Air Fry at 350°F (175°C) for 8-10 minutes; or Bake at 400°F (200°C) for 12-15 minutes until the top is golden brown.
  6. Garnish with fresh basil or parsley before serving.
