Ingredients:
- 8 oz goat cheese, softened
- 2 tbsp honey
- 1 tsp lemon juice
- 1/2 cup dried cranberries, roughly chopped
- 1/2 cup pecans, finely chopped
- 1 tbsp unsalted butter, melted
- 1/4 tsp salt
Instructions:
- Whip the base. In a small bowl, mix the softened goat cheese, honey, and lemon juice. Note: Stir until completely smooth with no lumps.
- Shape the log. Scoop the mixture onto a piece of parchment paper. Use a spatula to form it into a log.
- Prepare the coating. In a separate bowl, toss the chopped cranberries, pecans, and melted butter. Note: Add the salt here to ensure it's evenly distributed.
- Apply the crust. Roll the cheese log over the cranberry pecan mixture.
- Press firmly. Use your hands to press the toppings into the cheese. Do this until the log is completely encased and no white cheese is showing.
- Prep for baking. Carefully slide the parchment paper, with the log on top, onto a baking sheet.
- Bake the appetizer. Place in the oven at 350°F (175°C).
- Watch the clock. Bake for 8–10 minutes. Remove when the pecans smell nutty and the cheese looks just slightly softened.
