Ingredients:

  • 8 oz goat cheese, softened
  • 2 tbsp honey
  • 1 tsp lemon juice
  • 1/2 cup dried cranberries, roughly chopped
  • 1/2 cup pecans, finely chopped
  • 1 tbsp unsalted butter, melted
  • 1/4 tsp salt

Instructions:

  1. Whip the base. In a small bowl, mix the softened goat cheese, honey, and lemon juice. Note: Stir until completely smooth with no lumps.
  2. Shape the log. Scoop the mixture onto a piece of parchment paper. Use a spatula to form it into a log.
  3. Prepare the coating. In a separate bowl, toss the chopped cranberries, pecans, and melted butter. Note: Add the salt here to ensure it's evenly distributed.
  4. Apply the crust. Roll the cheese log over the cranberry pecan mixture.
  5. Press firmly. Use your hands to press the toppings into the cheese. Do this until the log is completely encased and no white cheese is showing.
  6. Prep for baking. Carefully slide the parchment paper, with the log on top, onto a baking sheet.
  7. Bake the appetizer. Place in the oven at 350°F (175°C).
  8. Watch the clock. Bake for 8–10 minutes. Remove when the pecans smell nutty and the cheese looks just slightly softened.
