Ingredients:

  • 1 lb cooked chicken breast, cubed or shredded
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp fresh lemon juice
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped

Instructions:

  1. In a small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, honey, lemon juice, salt, and pepper until the mixture is smooth.
  2. Add the diced celery, minced red onion, parsley, and dill to a large mixing bowl and toss them together.
  3. Add the cooked chicken to the vegetables and pour the Dijon dressing over the top, folding gently with a spatula until evenly coated.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to fuse.
