Ingredients:
- 4 cups (600g) cooked chicken breast, diced or shredded
- 1 cup (150g) red seedless grapes, halved
- ½ cup (50g) celery, finely diced
- ¼ cup (40g) red onion, minced
- ½ cup (60g) sliced almonds, toasted
- ½ cup (120g) mayonnaise
- 1 tbsp (15g) Dijon mustard
- 1 tbsp (15ml) fresh lemon juice
- ½ tsp (3g) fine sea salt
- ¼ tsp (1g) ground white pepper
Instructions:
- Dice the cooked chicken into bite-sized pieces. Halve the grapes and finely mince the celery and onion.
- In a small bowl, combine the mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Stir until the mixture is smooth and the lemon juice is fully incorporated.
- Place the chicken, celery, and onion in a large mixing bowl.
- Pour the dressing over the chicken mixture and fold gently with a spatula until the chicken is evenly coated.
- Stir in the halved grapes and toasted almonds. Mix only until combined to keep the grapes from bursting.
