Ingredients:

  • 2 medium zucchini (approx. 1 lb / 450g), sliced into 1/4-inch rounds
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1/2 cup finely grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano

Instructions:

  1. Preheat oven to 425°F (220°C). Slice the zucchini into uniform rounds and pat them firmly on both sides with paper towels to remove surface moisture.
  2. In a large bowl, toss the dried zucchini rounds with olive oil, salt, and black pepper until evenly coated. In a separate small bowl, combine grated Parmesan, garlic powder, and oregano.
  3. Line a baking sheet with parchment paper. Arrange zucchini in a single layer with space between slices. Press the Parmesan mixture onto the top of each slice.
  4. Bake for 15–20 minutes. Switch oven to broil for the final 1–2 minutes until the cheese is deep mahogany brown.
  5. Remove from oven and let rest for 2 minutes to allow the crust to set.
