Ingredients:
- 2 medium zucchini (approx. 1 lb / 450g), sliced into 1/4-inch rounds
- 2 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1/2 cup finely grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp dried oregano
Instructions:
- Preheat oven to 425°F (220°C). Slice the zucchini into uniform rounds and pat them firmly on both sides with paper towels to remove surface moisture.
- In a large bowl, toss the dried zucchini rounds with olive oil, salt, and black pepper until evenly coated. In a separate small bowl, combine grated Parmesan, garlic powder, and oregano.
- Line a baking sheet with parchment paper. Arrange zucchini in a single layer with space between slices. Press the Parmesan mixture onto the top of each slice.
- Bake for 15–20 minutes. Switch oven to broil for the final 1–2 minutes until the cheese is deep mahogany brown.
- Remove from oven and let rest for 2 minutes to allow the crust to set.
