Ingredients:
- 2 lbs (900g) boneless, skinless chicken thighs
- 3 medium (300g) carrots, sliced into rounds
- 2 stalks (60g) celery, diced
- 1 medium (110g) yellow onion, finely chopped
- 3 cloves (9g) garlic, minced
- 1 tsp (5g) dried thyme
- 1 tsp (5g) salt
- ½ tsp (3g) cracked black pepper
- 3 cups (710ml) low-sodium chicken broth
- ½ cup (120ml) skim milk
- 2 tbsp (16g) cornstarch
- 2 tbsp (30ml) water
- 1 tbsp (15ml) fresh lemon juice
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- 1 tsp (5g) salt
- 3 tbsp (42g) melted unsalted butter
- ¾ cup (180ml) whole milk
Instructions:
- Place the chopped onion, carrots, celery, and garlic at the bottom of the slow cooker.
- Layer the chicken thighs on top of the vegetables and season generously with salt, pepper, and dried thyme.
- Pour the low-sodium chicken broth over the mixture until the chicken is mostly submerged.
- Cover and cook for 6 hours until chicken is tender.
- Shred the chicken directly in the pot using two forks.
- Stir in the skim milk and the cornstarch slurry (cornstarch mixed with water). Turn the slow cooker to 'High' for 15 minutes to thicken the sauce.
- In a separate bowl, mix flour, baking powder, salt, melted butter, and whole milk to create the dumpling dough.
- Drop the dough in dollops onto the surface of the stew. Cover and cook undisturbed until dumplings are steamed and fluffy.
- Stir in fresh lemon juice just before serving for brightness.
