Ingredients:
- 3 lbs sweet potatoes, peeled and cut into 1-inch cubes
- 1 cup Granny Smith apples, peeled and diced
- 2 tbsp unsalted butter, melted
- 1/4 cup pure maple syrup
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp fine sea salt
- 1/4 tsp ground ginger
Instructions:
- In a large mixing bowl, toss the cubed sweet potatoes and diced apples with the melted butter and maple syrup.
- Sprinkle in the cinnamon, nutmeg, salt, and ginger, stirring until every cube is coated in the aromatic spice blend.
- Transfer the mixture into the slow cooker, smoothing the top with a spatula to ensure even cooking.
- Cover with the lid and cook on Low for 6 hours or High for 3 hours until potatoes are fork-tender and the liquid has thickened into a glaze.
- Gently stir the potatoes to incorporate the thickened glaze.
- Optional: Transfer potatoes to a baking dish and place under the broiler for 2–3 minutes until the edges are slightly caramelized.
