Ingredients:

  • 3 lbs sweet potatoes, peeled and cut into 1-inch cubes
  • 1 cup Granny Smith apples, peeled and diced
  • 2 tbsp unsalted butter, melted
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp fine sea salt
  • 1/4 tsp ground ginger

Instructions:

  1. In a large mixing bowl, toss the cubed sweet potatoes and diced apples with the melted butter and maple syrup.
  2. Sprinkle in the cinnamon, nutmeg, salt, and ginger, stirring until every cube is coated in the aromatic spice blend.
  3. Transfer the mixture into the slow cooker, smoothing the top with a spatula to ensure even cooking.
  4. Cover with the lid and cook on Low for 6 hours or High for 3 hours until potatoes are fork-tender and the liquid has thickened into a glaze.
  5. Gently stir the potatoes to incorporate the thickened glaze.
  6. Optional: Transfer potatoes to a baking dish and place under the broiler for 2–3 minutes until the edges are slightly caramelized.
