- 2 cups rotisserie chicken, shredded (approx. 10 oz)
- 8 oz full-fat brick-style cream cheese, softened
- 0.5 cup quality ranch dressing
- 0.5 cup Frank's RedHot Original sauce
- 1.5 cups sharp cheddar cheese, freshly shredded
- 0.25 cup scallions, thinly sliced
- 2 oz blue cheese crumbles
Instructions:
- In a large mixing bowl, beat the softened cream cheese until smooth. Fold in the Frank's RedHot sauce and ranch dressing until a uniform orange base is formed to ensure proper emulsion.
- Fold the shredded rotisserie chicken into the cream base until every strand of meat is thoroughly coated. Mix in 1 cup of the freshly shredded cheddar cheese.
- Transfer the mixture to an 9x9 inch glass baking dish or small oven-safe skillet. Smooth the top with a spatula and sprinkle the remaining 0.5 cup of cheddar cheese over the top.
- Bake at 350°F (175°C) for 20 minutes until the dip is heated through and bubbling.
- Switch the oven to 'Broil' for 2 minutes, watching closely until the cheese topping develops charred spots and a bubbly crust. Garnish with sliced scallions and blue cheese crumbles before serving.
