Ingredients:
- 1.5 lbs zucchini, sliced into spears or ½ inch rounds
- 2 tbsp extra virgin olive oil
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
Instructions:
- Preheat your oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
- Wash the zucchini and slice it into consistent spears or rounds.
- In a large mixing bowl, toss the zucchini with olive oil, garlic powder, salt, and black pepper until every piece is lightly coated.
- Spread the zucchini in a single layer on the prepared baking sheet, ensuring pieces are not touching to prevent steaming.
- Bake for 10–12 minutes until the edges begin to turn a light golden brown.
- Remove the pan from the oven and sprinkle the grated Parmesan cheese evenly over the top.
- Return to the oven for another 5–8 minutes until the cheese is melted and the zucchini is mahogany-colored and tender.
