Ingredients:
- 1 cup (245g) Full-fat plain Greek yogurt
- 1/3 cup (85g) Creamy peanut butter
- 2 tbsp (30ml) Maple syrup
- 1/2 tsp (2.5ml) Vanilla extract
- 1/4 cup (40g) Mini dark chocolate chips
- 1 tbsp (15g) Crushed roasted peanuts
Instructions:
- In a medium mixing bowl, combine the peanut butter, maple syrup, and vanilla extract. Whisk vigorously until the mixture is smooth and glossy.
- Slowly fold in the Greek yogurt using a spatula until no white streaks remain and the color is a uniform pale tan.
- Gently fold in the mini chocolate chips and crushed roasted peanuts.
- Line a baking sheet with parchment paper. Drop rounded tablespoons of the mixture onto the sheet, spacing them 1 inch apart, and smooth the tops with the back of a spoon.
- Place the tray in the freezer for at least 3 hours, or until the bites feel firm to the touch.
