Ingredients:
- 2 cups whole milk
- 3 large eggs, room temperature
- 3 tbsp honey
- 1 tsp pure vanilla bean paste
- 1 pinch sea salt
- 1/4 tsp freshly grated nutmeg
Instructions:
- Preheat your oven to 325°F (165°C). In a small saucepan, warm the milk until it just begins to steam (do not boil).
- In a large mixing bowl, whisk the eggs, honey, vanilla, and salt until combined without creating excess foam.
- Slowly stream the warm milk into the egg mixture while whisking continuously to prevent curdling.
- Strain the mixture through a fine-mesh sieve into 4 (6-ounce) ramekins for a velvety finish.
- Place ramekins in a large baking pan and fill the pan with boiling water halfway up the sides of the ramekins (bain-marie).
- Dust the tops with freshly grated nutmeg and bake for 35 minutes until the edges are set but the center still wobbles slightly.
