Ingredients:

  • 2 cups whole milk
  • 3 large eggs, room temperature
  • 3 tbsp honey
  • 1 tsp pure vanilla bean paste
  • 1 pinch sea salt
  • 1/4 tsp freshly grated nutmeg

Instructions:

  1. Preheat your oven to 325°F (165°C). In a small saucepan, warm the milk until it just begins to steam (do not boil).
  2. In a large mixing bowl, whisk the eggs, honey, vanilla, and salt until combined without creating excess foam.
  3. Slowly stream the warm milk into the egg mixture while whisking continuously to prevent curdling.
  4. Strain the mixture through a fine-mesh sieve into 4 (6-ounce) ramekins for a velvety finish.
  5. Place ramekins in a large baking pan and fill the pan with boiling water halfway up the sides of the ramekins (bain-marie).
  6. Dust the tops with freshly grated nutmeg and bake for 35 minutes until the edges are set but the center still wobbles slightly.
