Ingredients:

  • 1 sheet (250g) frozen puff pastry, thawed
  • 1 large egg
  • 1 tbsp (15ml) water
  • 4 oz (113g) softened goat cheese
  • 4 tbsp (60ml) fig jam
  • 1 tsp (5g) fresh thyme leaves

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Note: High heat is non negotiable for the puff effect.
  2. Unroll the thawed puff pastry on a lightly floured surface. Use a pizza cutter to slice it into 12 equal squares, about 3x3 inches each.
  3. Place the squares on the baking sheet, leaving about a half inch of space between them. Note: They expand sideways as they rise, so don't crowd them.
  4. Whisk 1 large egg with 1 tbsp of water in a small bowl. Lightly brush only the edges of each square with this mixture.
  5. Spoon 1 teaspoon of fig jam directly into the center of each square.
  6. Top the jam with a generous dollop of softened goat cheese, pressing down gently to secure it.
  7. Bake for 12–15 minutes until the edges are puffed and mahogany colored and the cheese is just starting to soften.
  8. Remove from the oven and immediately scatter fresh thyme leaves over the hot cheese.
