  • 1 lb boneless, skinless chicken breast
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup plain Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1/4 tsp dried dill
  • 1/2 cup celery, finely diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup crumbled feta cheese
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup green apple, diced

Instructions:

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 6-8 minutes per side until golden brown and the internal temperature reaches 165°F (74°C).
  3. Let the chicken rest for 5 minutes before dicing into small cubes.
  4. In a small bowl, whisk together the Greek yogurt, lemon juice, honey, minced garlic, and dried dill until velvety smooth.
  5. Place the diced chicken, celery, red onion, and apple into a large mixing bowl.
  6. Pour the dressing over the chicken mixture and fold gently until every piece is creamily coated.
  7. Stir in the crumbled feta and fresh parsley last to keep the cheese intact and the herbs vibrant.
