Ingredients:
- 1 lb boneless, skinless chicken breast
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1/2 cup plain Greek yogurt
- 1 tbsp fresh lemon juice
- 1 tsp honey
- 1 clove garlic, minced
- 1/4 tsp dried dill
- 1/2 cup celery, finely diced
- 1/4 cup red onion, finely diced
- 1/4 cup crumbled feta cheese
- 2 tbsp fresh parsley, chopped
- 1/2 cup green apple, diced
Instructions:
- Season chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken for 6-8 minutes per side until golden brown and the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before dicing into small cubes.
- In a small bowl, whisk together the Greek yogurt, lemon juice, honey, minced garlic, and dried dill until velvety smooth.
- Place the diced chicken, celery, red onion, and apple into a large mixing bowl.
- Pour the dressing over the chicken mixture and fold gently until every piece is creamily coated.
- Stir in the crumbled feta and fresh parsley last to keep the cheese intact and the herbs vibrant.
