Ingredients:

  • 48 oz Unsweetened Pineapple Juice (chilled)
  • 2 cups Lemon-Lime Sparkling Water (unsweetened)
  • 1/4 cup Freshly squeezed Lime Juice
  • 2 drops Neon Green food coloring
  • 2 Liters Sprite or Sprite Zero (well-chilled)
  • 1 quart Lime Sherbet
  • 1/2 cup Red Sanding Sugar
  • 1 Lime wedge
  • 1 jar Maraschino Cherries

Instructions:

  1. Place red sanding sugar on a small shallow plate. Run a lime wedge around the rim of each glass, then dip the glass into the sugar to create a festive red rim.
  2. In a large 5-quart punch bowl, combine the chilled unsweetened pineapple juice, fresh lime juice, and lemon-lime sparkling water. Stir gently to incorporate.
  3. Add 2 drops of neon green food coloring to the juice base if a more intense Grinch-green color is desired.
  4. Just before serving, slowly pour the chilled Sprite or Sprite Zero down the inside wall of the punch bowl to preserve carbonation.
  5. Using an ice cream scoop, place scoops of lime sherbet across the surface of the punch. The sherbet will react with the juices to create a frothy green foam head.
  6. Ladle the punch into the rimmed glasses and garnish each with a maraschino cherry to represent the Grinch's heart.
