Ingredients:
- 2 medium zucchinis, grated
- 1 medium brown onion, finely diced
- 1 large carrot, grated
- 5 large eggs, lightly beaten
- 1 cup self-raising flour
- 1/2 cup grated sharp cheddar cheese
- 4 oz bacon, diced and sautéed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp dried oregano
Instructions:
- Grate the zucchini into a colander, sprinkle with a pinch of salt, and let sit for 5 minutes.
- Using a kitchen towel or your hands, squeeze the zucchini firmly to expel as much liquid as possible.
- Finely dice the onion and grate the carrot.
- Preheat the oven to 350°F (175°C) and line a 9x9 inch square baking pan with parchment paper.
- In a large bowl, whisk the eggs and olive oil until combined.
- Fold in the squeezed zucchini, diced onion, grated carrot, and sautéed bacon.
- Stir in the flour, salt, pepper, and oregano, then fold in the cheese last.
- Pour the mixture into the prepared pan and smooth the top with a spatula.
- Bake for 30–35 minutes until the edges are mahogany gold and the center feels firm to a light touch.
- Allow the slice to cool in the pan for 10 minutes before lifting and slicing.
