Ingredients:

  • 2 medium zucchinis, grated
  • 1 medium brown onion, finely diced
  • 1 large carrot, grated
  • 5 large eggs, lightly beaten
  • 1 cup self-raising flour
  • 1/2 cup grated sharp cheddar cheese
  • 4 oz bacon, diced and sautéed
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dried oregano

Instructions:

  1. Grate the zucchini into a colander, sprinkle with a pinch of salt, and let sit for 5 minutes.
  2. Using a kitchen towel or your hands, squeeze the zucchini firmly to expel as much liquid as possible.
  3. Finely dice the onion and grate the carrot.
  4. Preheat the oven to 350°F (175°C) and line a 9x9 inch square baking pan with parchment paper.
  5. In a large bowl, whisk the eggs and olive oil until combined.
  6. Fold in the squeezed zucchini, diced onion, grated carrot, and sautéed bacon.
  7. Stir in the flour, salt, pepper, and oregano, then fold in the cheese last.
  8. Pour the mixture into the prepared pan and smooth the top with a spatula.
  9. Bake for 30–35 minutes until the edges are mahogany gold and the center feels firm to a light touch.
  10. Allow the slice to cool in the pan for 10 minutes before lifting and slicing.
