Ingredients:
- 2.25 cups All-purpose flour
- 1 package (3.4 oz) Instant Vanilla Pudding Mix
- 1 tsp Baking soda
- 0.5 tsp Sea salt
- 0.75 cup Unsalted butter, softened
- 0.5 cup Light brown sugar, packed
- 0.25 cup Granulated sugar
- 1 Large egg
- 1 tsp Pure vanilla extract
- 0.5 cup Ripe banana, mashed
- 1 cup White chocolate chips
- 1 cup Vanilla wafers, crushed
Instructions:
- In a large bowl or stand mixer, beat the softened butter with the light brown sugar and granulated sugar until the mixture is pale and aerated, approximately 2–3 minutes.
- Add the egg, vanilla extract, and mashed banana to the butter mixture. Beat until just combined. Note: The mixture may appear slightly curdled due to the moisture in the banana.
- In a separate medium bowl, whisk together the flour, dry instant vanilla pudding mix, baking soda, and sea salt.
- Gradually add the dry ingredients to the wet ingredients on low speed. Mix until just combined and no flour streaks remain.
- Using a spatula, gently fold in the white chocolate chips and half of the crushed vanilla wafers by hand to preserve the texture.
- Scoop rounded tablespoons (approximately 1.5 tablespoons each) of dough onto prepared baking sheets lined with parchment paper. Top each dough ball with the remaining crushed vanilla wafers.
- Bake for 10 minutes or until the edges are just set but the centers remain soft. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
