Ingredients:

  • 2.25 cups All-purpose flour
  • 1 package (3.4 oz) Instant Vanilla Pudding Mix
  • 1 tsp Baking soda
  • 0.5 tsp Sea salt
  • 0.75 cup Unsalted butter, softened
  • 0.5 cup Light brown sugar, packed
  • 0.25 cup Granulated sugar
  • 1 Large egg
  • 1 tsp Pure vanilla extract
  • 0.5 cup Ripe banana, mashed
  • 1 cup White chocolate chips
  • 1 cup Vanilla wafers, crushed

Instructions:

  1. In a large bowl or stand mixer, beat the softened butter with the light brown sugar and granulated sugar until the mixture is pale and aerated, approximately 2–3 minutes.
  2. Add the egg, vanilla extract, and mashed banana to the butter mixture. Beat until just combined. Note: The mixture may appear slightly curdled due to the moisture in the banana.
  3. In a separate medium bowl, whisk together the flour, dry instant vanilla pudding mix, baking soda, and sea salt.
  4. Gradually add the dry ingredients to the wet ingredients on low speed. Mix until just combined and no flour streaks remain.
  5. Using a spatula, gently fold in the white chocolate chips and half of the crushed vanilla wafers by hand to preserve the texture.
  6. Scoop rounded tablespoons (approximately 1.5 tablespoons each) of dough onto prepared baking sheets lined with parchment paper. Top each dough ball with the remaining crushed vanilla wafers.
  7. Bake for 10 minutes or until the edges are just set but the centers remain soft. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
