Ingredients:
- 6 cups all-purpose flour
- 1/4 cup coconut sugar
- 3 tbsp baking powder
- 2 tsp baking soda
- 2 tsp fine sea salt
- 1 cup cultured buttermilk powder
- 1 cup water
- 1 large egg
- 2 tbsp melted butter
- 1 tsp pure vanilla extract
Instructions:
- Measure 6 cups all purpose flour into a massive mixing bowl.
- Whisk in 3 tbsp baking powder and 2 tsp baking soda.
- Incorporate 1/4 cup coconut sugar and 2 tsp fine sea salt.
- Stir in 1 cup cultured buttermilk powder until the mixture looks like a uniform white powder.
- Transfer the mix to an airtight container.
- Whisk 2 cups of your prepared mix in a medium bowl.
- In a separate jar, combine 1 cup water, 1 large egg, 2 tbsp melted butter, and 1 tsp pure vanilla extract.
- Pour the wet into the dry. Mix until just combined; lumps are your friends here.
- Let the batter sit for 10 minutes. Note: This allows the flour to hydrate and the bubbles to form.
- Heat your pan over medium. Pour 1/4 cup portions and cook until bubbles form on the surface and edges look set.
- Flip carefully and cook for another 1-2 minutes until the bottom is deep golden brown.
