Ingredients:
- 2 cups (200g) super-fine blanched almond flour
- 1/4 cup (30g) coconut flour
- 1/2 cup (100g) monk fruit or erythritol blend
- 1 tsp (5g) baking powder
- 1/4 tsp (1.5g) salt
- 3 large (150g) eggs
- 1/4 cup (55g) unsalted melted butter
- 1 1/2 cups (170g) shredded and squeezed dry zucchini
- 1 tbsp (6g) freshly grated lemon zest
- 2 tbsp (30ml) fresh squeezed lemon juice
- 1 tsp (5ml) vanilla extract
- 2 oz (55g) softened cream cheese
- 2 tbsp (20g) powdered monk fruit sweetener
- 1 tsp (5ml) lemon juice
Instructions:
- Shred the zucchini into fine pieces using a box grater or food processor.
- Place the shredded zucchini in a cheesecloth or tea towel and squeeze firmly to remove as much liquid as possible.
- Preheat the oven to 350°F (175°C) and line a 9x5 inch loaf pan with parchment paper.
- In a medium bowl, whisk together almond flour, coconut flour, granular sweetener, baking powder, and salt until no clumps remain.
- In a larger bowl, whisk eggs, melted butter, lemon juice, lemon zest, and vanilla extract until smooth and slightly frothy.
- Fold the dry ingredients into the wet ingredients using a spatula, then fold in the squeezed zucchini until evenly distributed.
- Transfer the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50–60 minutes until the top is deep mahogany brown and a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Whisk together cream cheese, powdered sweetener, and lemon juice until velvety, then drizzle over the cooled loaf.
