Ingredients:

  • 2 lbs fresh zucchini, sliced into 1/4-inch rounds
  • 1 tsp kosher salt
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 2 large eggs, beaten
  • 3 cloves garlic, minced
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup parmesan cheese, freshly grated
  • 2 tbsp unsalted butter, melted

Instructions:

  1. Toss the sliced zucchini with kosher salt in a large bowl. Let it sit for 10 minutes. Note: You'll see beads of water forming on the slices.
  2. Transfer the zucchini to a colander. Press down firmly with your hands or a heavy plate until most of the liquid is gone.
  3. In a medium bowl, whisk the softened cream cheese, heavy cream, beaten eggs, minced garlic, pepper, and nutmeg. Whisk until the mixture is velvety and smooth.
  4. Preheat your oven to 375°F (190°C). Grease your 9x9 inch dish with the melted butter.
  5. Fold the squeezed zucchini into the cheese mixture. Stir gently until every slice is coated.
  6. Pour the mixture into the buttered baking dish and smooth the top.
  7. Sprinkle the shredded cheddar and parmesan evenly over the top.
  8. Bake for 20-25 minutes until the edges are bubbling and the top is golden brown.
