Ingredients:
- 2 lbs fresh zucchini, sliced into 1/4-inch rounds
- 1 tsp kosher salt
- 4 oz cream cheese, softened
- 1/2 cup heavy cream
- 2 large eggs, beaten
- 3 cloves garlic, minced
- 1/2 tsp black pepper
- 1/4 tsp nutmeg
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup parmesan cheese, freshly grated
- 2 tbsp unsalted butter, melted
Instructions:
- Toss the sliced zucchini with kosher salt in a large bowl. Let it sit for 10 minutes. Note: You'll see beads of water forming on the slices.
- Transfer the zucchini to a colander. Press down firmly with your hands or a heavy plate until most of the liquid is gone.
- In a medium bowl, whisk the softened cream cheese, heavy cream, beaten eggs, minced garlic, pepper, and nutmeg. Whisk until the mixture is velvety and smooth.
- Preheat your oven to 375°F (190°C). Grease your 9x9 inch dish with the melted butter.
- Fold the squeezed zucchini into the cheese mixture. Stir gently until every slice is coated.
- Pour the mixture into the buttered baking dish and smooth the top.
- Sprinkle the shredded cheddar and parmesan evenly over the top.
- Bake for 20-25 minutes until the edges are bubbling and the top is golden brown.
