Ingredients:
- 1 lb pork sausage meat
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp dried thyme
- 2 tbsp fine breadcrumbs
- 1 sheet (400g) chilled puff pastry
- 1 large egg, beaten
Instructions:
- Combine the sausage meat, salt, pepper, herbs, and breadcrumbs in a bowl. Mix until just combined, then shape the mixture into a long log on a piece of parchment paper.
- Roll out the puff pastry sheet on a lightly floured surface. Place the meat log along the edge and roll the pastry tightly over the meat, sealing the edge with a dab of beaten egg.
- Trim any excess overlapping pastry with a sharp knife to ensure a single, even layer.
- Slice the log into 1-inch (2.5cm) mini rolls and place them on a lined baking sheet.
- Brush the tops of the rolls generously with the beaten egg wash.
- Bake in a preheated oven at 400°F (200°C) for 20 minutes or until the pastry is puffed and golden brown.
