Ingredients:

  • 3 large overripe bananas (approx. 350g mashed)
  • 0.5 cup unsalted butter (113g), melted and cooled
  • 0.75 cup brown sugar (150g), packed
  • 1 large egg, room temperature
  • 0.25 cup Greek yogurt (60g)
  • 2 tsp vanilla extract (10ml)
  • 1.5 cups all-purpose flour (190g)
  • 1 tsp baking soda (5g)
  • 0.5 tsp fine sea salt (3g)
  • 0.5 tsp ground cinnamon
  • 1 cup semi-sweet chocolate chips (170g), divided

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan and line it with parchment paper for easy removal.
  2. In a large mixing bowl, mash the 3 large bananas until mostly smooth. Whisk in the melted butter, brown sugar, egg, Greek yogurt, and vanilla extract until the mixture is glossy and well-combined.
  3. Add the all-purpose flour, baking soda, salt, and cinnamon directly into the bowl. Use a silicone spatula to gently fold the dry ingredients into the wet base until just combined and no flour streaks remain.
  4. Gently fold 3/4 cup of the semi-sweet chocolate chips into the batter, taking care not to over-mix.
  5. Pour the batter into the prepared loaf pan. Sprinkle the remaining 1/4 cup of chocolate chips over the top of the batter.
  6. Bake for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean or with just a few moist crumbs. Allow to cool in the pan for at least 10 minutes before slicing.
