Ingredients:

  • 3 large overripe bananas (approx. 340g)
  • 1/2 cup melted coconut oil (120ml)
  • 3/4 cup packed brown sugar (150g)
  • 1 tsp pure vanilla extract
  • 1 tsp apple cider vinegar
  • 1 1/2 cups all-purpose flour (190g)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup chopped walnuts (50g)

Instructions:

  1. Preheat your oven to 350°F (180°C) and line a 9x5 inch loaf pan with parchment paper.
  2. In a large mixing bowl, mash the overripe bananas with a fork until they reach a soupy consistency with few lumps. Whisk in the melted coconut oil, brown sugar, vanilla extract, and apple cider vinegar for 1 minute until emulsified.
  3. Sift the flour, baking soda, salt, and cinnamon directly into the banana mixture. Using a spatula, fold the dry ingredients into the wet until just combined and no flour streaks remain. Do not over-mix.
  4. Gently fold in the chopped walnuts. Pour the batter into the prepared loaf pan and smooth the top.
  5. Bake for 55 minutes. The loaf is done when a skewer inserted into the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
