Ingredients:

  • 3 medium zucchini, cut into sticks (approx. 680g)
  • 1/2 tsp salt
  • 2 large eggs, beaten
  • 1 tbsp milk
  • 1/2 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions:

  1. Slice zucchini into 1/4 inch thick sticks. Toss them with salt in a colander and let them sit for 10 minutes to draw out moisture. Use paper towels to firmly pat every stick dry.
  2. Prepare the breading station by placing beaten eggs and milk in one shallow bowl, and combining Panko, Parmesan, garlic powder, smoked paprika, and black pepper in a second shallow bowl.
  3. Dip each zucchini stick into the egg mixture, shake off the excess, and roll in the Parmesan mixture, pressing firmly to adhere. Place the sticks on a wire cooling rack over a baking sheet, ensuring they do not touch.
  4. Preheat the oven to 425°F (220°C). Lightly drizzle the tops of the fries with olive oil. Bake for 12–15 minutes, flip carefully, and bake for another 10 minutes until deep golden brown.
