Ingredients:
- 3 medium zucchini, cut into sticks (approx. 680g)
- 1/2 tsp salt
- 2 large eggs, beaten
- 1 tbsp milk
- 1/2 cup Panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions:
- Slice zucchini into 1/4 inch thick sticks. Toss them with salt in a colander and let them sit for 10 minutes to draw out moisture. Use paper towels to firmly pat every stick dry.
- Prepare the breading station by placing beaten eggs and milk in one shallow bowl, and combining Panko, Parmesan, garlic powder, smoked paprika, and black pepper in a second shallow bowl.
- Dip each zucchini stick into the egg mixture, shake off the excess, and roll in the Parmesan mixture, pressing firmly to adhere. Place the sticks on a wire cooling rack over a baking sheet, ensuring they do not touch.
- Preheat the oven to 425°F (220°C). Lightly drizzle the tops of the fries with olive oil. Bake for 12–15 minutes, flip carefully, and bake for another 10 minutes until deep golden brown.
