Ingredients:
- 6 cups fresh peaches, peeled and sliced
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 3 tbsp cornstarch
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
Instructions:
- Peel, pit, and slice the peaches into wedges about 1/2 inch thick. Place them in your large mixing bowl.
- Toss the slices with granulated sugar, light brown sugar, lemon juice, lemon zest, cinnamon, nutmeg, and salt.
- Let the mixture sit for 10 to 15 minutes. Watch for a pool of syrup to form at the bottom of the bowl.
- Sprinkle the cornstarch over the peaches. Toss gently to coat every slice.
- Transfer the fruit and all the liquid into a medium saucepan.
- Set the heat to medium. Stir occasionally for 5 to 8 minutes.
- Cook until the liquid turns from cloudy white to a clear, bubbling, mahogany colored glaze.
- Remove from heat immediately once the syrup is thick but the peaches still hold their shape.
