Ingredients:

  • 6 cups fresh peaches, peeled and sliced
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 3 tbsp cornstarch
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt

Instructions:

  1. Peel, pit, and slice the peaches into wedges about 1/2 inch thick. Place them in your large mixing bowl.
  2. Toss the slices with granulated sugar, light brown sugar, lemon juice, lemon zest, cinnamon, nutmeg, and salt.
  3. Let the mixture sit for 10 to 15 minutes. Watch for a pool of syrup to form at the bottom of the bowl.
  4. Sprinkle the cornstarch over the peaches. Toss gently to coat every slice.
  5. Transfer the fruit and all the liquid into a medium saucepan.
  6. Set the heat to medium. Stir occasionally for 5 to 8 minutes.
  7. Cook until the liquid turns from cloudy white to a clear, bubbling, mahogany colored glaze.
  8. Remove from heat immediately once the syrup is thick but the peaches still hold their shape.
