Ingredients:
- 3 cups (240g) Corn Chex cereal
- 3 cups (150g) Rice Chex cereal
- 2 cups (120g) Mini pretzels
- 1/2 cup (60g) Roasted pumpkin seeds
- 1/2 cup (70g) Roasted cashews
- 1/2 cup (115g) Unsalted butter
- 1/2 cup (100g) Light brown sugar, packed
- 1 tbsp (6g) Pumpkin pie spice
- 1/2 tsp (3g) Ground cinnamon
- 1/4 tsp (1.5g) Salt
- 1 tsp (5ml) Vanilla extract
- 1/2 cup (75g) Candy corn
- 1/2 cup (90g) Butterscotch chips
Instructions:
- Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the corn Chex, rice Chex, pretzels, pumpkin seeds, and cashews. Stir gently to avoid crushing the cereal.
- Place the butter and brown sugar in a small saucepan over medium heat. Stir constantly until the butter is melted and the sugar has dissolved into a smooth, bubbling syrup.
- Remove from heat and immediately whisk in the pumpkin pie spice, cinnamon, salt, and vanilla extract until the mixture is fragrant and mahogany-colored.
- Pour the warm glaze over the cereal mixture and use a spatula to fold everything together until every piece is evenly coated.
- Spread the mix in a single layer across the prepared baking sheet.
- Bake for 45 minutes, stirring every 15 minutes to ensure the spices don't clump and the mix toasts evenly.
- Remove from the oven and let it cool completely on the pan to develop the crunch.
- Once cooled, toss in the candy corn and butterscotch chips.
