- ½ cup (75g) crumbled feta cheese
- ½ cup (125g) classic hummus
Instructions:
- Divide the pre-cooked quinoa evenly between two containers and press the grains down slightly with a spoon to create a stable bed.
- Distribute the shredded rotisserie chicken atop the quinoa in a single layer.
- Scatter the diced English cucumber over one side of the bowl.
- Scoop a generous dollop of hummus into the center of each bowl, using the back of the spoon to create a small well.
- Sprinkle the crumbled feta cheese over the top of the assembly.
