Ingredients:
- 3 cups (450g) cooked chicken breast
- 1/2 cup (60g) celery, finely diced
- 1/2 cup (75g) red grapes, halved
- 1/3 cup (40g) toasted pecans, chopped
- 2 tbsp (8g) fresh parsley, minced
- 1/2 cup (120ml) mayonnaise
- 2 tbsp (30ml) Greek yogurt
- 1 tbsp (15ml) lemon juice, freshly squeezed
- 1 tsp (5ml) Dijon mustard
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
Instructions:
- Cube the cooked chicken into uniform 1/2-inch pieces. Dice the celery and halve the grapes.
- In a small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and black pepper until the mixture is a smooth, pale cream.
- Combine the cubed chicken, diced celery, halved grapes, and chopped pecans in a large mixing bowl.
- Pour the dressing over the ingredients and gently fold together with a spatula until the chicken is fully coated and glossy.
- Optional: Chill for 30 minutes to allow flavors to infuse before serving.
