Ingredients:

  • 3 cups (450g) cooked chicken breast
  • 1/2 cup (60g) celery, finely diced
  • 1/2 cup (75g) red grapes, halved
  • 1/3 cup (40g) toasted pecans, chopped
  • 2 tbsp (8g) fresh parsley, minced
  • 1/2 cup (120ml) mayonnaise
  • 2 tbsp (30ml) Greek yogurt
  • 1 tbsp (15ml) lemon juice, freshly squeezed
  • 1 tsp (5ml) Dijon mustard
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Cube the cooked chicken into uniform 1/2-inch pieces. Dice the celery and halve the grapes.
  2. In a small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and black pepper until the mixture is a smooth, pale cream.
  3. Combine the cubed chicken, diced celery, halved grapes, and chopped pecans in a large mixing bowl.
  4. Pour the dressing over the ingredients and gently fold together with a spatula until the chicken is fully coated and glossy.
  5. Optional: Chill for 30 minutes to allow flavors to infuse before serving.
