- ¼ cup (60g) celery, finely diced
- 2 tbsp (30g) fresh parsley, chopped
Instructions:
- Dice the cooked chicken breast into uniform ½-inch cubes. Ensure the chicken is completely cooled to room temperature to prevent the mayonnaise from melting.
- In a separate small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, kosher salt, and cracked black pepper until the mixture is smooth and velvety.
- Stir the sliced green onions and diced celery into the dressing mixture.
- Pour the dressing over the diced chicken, add the chopped fresh parsley, and gently fold the mixture together using a rubber spatula until evenly coated.
