  • ½ cup (50g) green onions, thinly sliced
  • ¼ cup (60g) celery, finely diced
  • 2 tbsp (30g) fresh parsley, chopped

Instructions:

  1. Dice the cooked chicken breast into uniform ½-inch cubes. Ensure the chicken is completely cooled to room temperature to prevent the mayonnaise from melting.
  2. In a separate small bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, kosher salt, and cracked black pepper until the mixture is smooth and velvety.
  3. Stir the sliced green onions and diced celery into the dressing mixture.
  4. Pour the dressing over the diced chicken, add the chopped fresh parsley, and gently fold the mixture together using a rubber spatula until evenly coated.
