Ingredients:
- 3 lb beef chuck roast, trimmed of excess exterior fat
- 1 tbsp avocado oil
- 1/2 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/2 cup low-sodium soy sauce
- 1/4 cup honey
- 2 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/4 tsp red pepper flakes
- 2 stalks green onion, thinly sliced
- 1 tsp toasted sesame seeds
- 1 tbsp fresh lime juice
Instructions:
- Pat the beef dry with paper towels and season with salt and pepper.
- Heat avocado oil in a skillet over medium-high heat. Sear the roast for 3-5 minutes per side until a deep, brown crust forms.
- Transfer the seared beef to the slow cooker.
- In a small bowl, whisk together the low-sodium soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes. Pour the mixture over the beef.
- Cover and cook on Low for 8 hours (or High for 4-5 hours) until the meat is tender enough to shred with a fork.
- Remove the beef carefully and set it on a platter.
- Pour the remaining cooking liquid into a small saucepan. Simmer over medium-high heat for 8-10 minutes, stirring occasionally, until the liquid reduces by half and becomes a glossy, syrupy glaze.
- Pour the concentrated sauce back over the beef and garnish with sliced green onion, toasted sesame seeds, and fresh lime juice.
