Ingredients:
- 1 lb fresh strawberries, hulled and quartered
- 2 tbsp granulated sugar
- 1 tsp fresh lemon juice
- 0.5 tsp lemon zest
- 1 cup heavy whipping cream, chilled
- 1 tbsp powdered sugar
- 1 tsp pure vanilla extract
Instructions:
- Place the sliced strawberries in a medium bowl and sprinkle with granulated sugar and lemon juice. Toss gently and let sit for 10 minutes at room temperature to trigger osmosis and create a natural syrup.
- Pour the cold heavy cream into a pre-chilled mixing bowl. Add the powdered sugar and vanilla.
- Using an electric mixer on medium-high speed, whip the mixture until soft, billowy peaks form and the texture is satiny.
- Fold half of the macerated strawberries and their syrup into the cream using a spatula, creating high-contrast pink swirls.
- Spoon the mixture into chilled glasses and top with the remaining berries. Serve immediately.
