Ingredients:

  • 4 cups (600g) cooked chicken breast, diced or shredded
  • 2 large (100g) hard-boiled eggs, chopped
  • ¾ cup (170g) mayonnaise
  • 1 tbsp (15g) Dijon mustard
  • 1 tbsp (15ml) fresh lemon juice
  • ½ tsp (3g) celery seed
  • ½ tsp (3g) kosher salt
  • ¼ tsp (1g) cracked black pepper
  • ½ cup (50g) celery, finely diced
  • ¼ cup (40g) red onion, minced
  • ¼ cup (60g) sweet pickle relish
  • ½ cup (75g) halved red grapes

Instructions:

  1. Dice the cooked chicken into ½-inch cubes and finely mince the celery and red onion.
  2. In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, celery seed, salt, and pepper until the mixture is smooth and glossy.
  3. Combine the chicken, chopped hard-boiled eggs, celery, and red onion in a large mixing bowl.
  4. Pour the dressing over the chicken mixture and gently fold with a rubber spatula until evenly coated.
  5. Transfer to an airtight glass container and chill for 30 minutes to allow flavors to develop.
