Ingredients:
- 4 cups (600g) cooked chicken breast, diced or shredded
- 2 large (100g) hard-boiled eggs, chopped
- ¾ cup (170g) mayonnaise
- 1 tbsp (15g) Dijon mustard
- 1 tbsp (15ml) fresh lemon juice
- ½ tsp (3g) celery seed
- ½ tsp (3g) kosher salt
- ¼ tsp (1g) cracked black pepper
- ½ cup (50g) celery, finely diced
- ¼ cup (40g) red onion, minced
- ¼ cup (60g) sweet pickle relish
- ½ cup (75g) halved red grapes
Instructions:
- Dice the cooked chicken into ½-inch cubes and finely mince the celery and red onion.
- In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, celery seed, salt, and pepper until the mixture is smooth and glossy.
- Combine the chicken, chopped hard-boiled eggs, celery, and red onion in a large mixing bowl.
- Pour the dressing over the chicken mixture and gently fold with a rubber spatula until evenly coated.
- Transfer to an airtight glass container and chill for 30 minutes to allow flavors to develop.
