Ingredients:
- 8 oz (225g) plain goat cheese, softened
- 2 tbsp (30g) plain Greek yogurt
- 1 tsp (5ml) fresh lemon juice
- 1/4 tsp (1.5g) sea salt
- 2 tbsp (42g) raw honey
- 1 tbsp (15ml) extra virgin olive oil
- 1 tsp (2g) fresh thyme leaves
- 1/2 tsp (3g) cracked black pepper
- 1 cup (150g) baby carrots, peeled
- 1 cup (150g) cucumber slices
- 1 cup (150g) snap peas
- 30g whole-grain seed crackers
Instructions:
- Place the softened goat cheese, Greek yogurt, lemon juice, and salt into the food processor. Pulse on high for 60–90 seconds until a velvety, glossy consistency is achieved.
- Spoon the whipped mixture onto the center of a wooden serving board or ceramic platter. Use the back of a spoon to create a deep circular swoosh, leaving a well in the middle.
- Drizzle the honey and olive oil directly into the center well and swirl them slightly.
- Sprinkle the fresh thyme and cracked black pepper over the top. Arrange the baby carrots, cucumber slices, snap peas, and crackers symmetrically around the cheese.
