Ingredients:

  • 3 cups zucchini, thinly sliced
  • 1 large yellow onion, halved and thinly sliced
  • 2 cloves garlic, minced
  • 4 large eggs, room temperature
  • 4 oz cream cheese, softened
  • 1/2 cup vegetable oil
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup parmesan cheese, freshly grated
  • 1 tbsp fresh oregano, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Prep the heat. Preheat your oven to 350°F (175°C) and grease a 9 inch deep dish pie plate thoroughly with butter or non stick spray.
  2. Sauté the vegetables. In a large skillet over medium high heat, sauté the sliced onions and zucchini in a splash of oil for 5–7 minutes until caramelized and mahogany colored at the edges. This step is vital for flavor and texture.
  3. Add the aromatics. Stir in the minced garlic for the last 60 seconds of cooking, until fragrant and golden, then remove the skillet from the heat to cool slightly.
  4. Whisk the liquids. In a large mixing bowl, whisk the 4 room temperature eggs and 4 oz of softened cream cheese until the mixture is completely smooth and no large lumps remain.
  5. Emulsify the oil. Gradually whisk in the 1/2 cup of vegetable oil, pouring in a slow stream while whisking constantly to ensure a stable base.
  6. Form the batter. Fold in the 1 cup of flour, 1 tsp baking powder, salt, and pepper until a thick, uniform batter forms and no dry streaks of flour are visible.
  7. Combine ingredients. Gently fold the sautéed vegetables and half of the Parmesan cheese into the batter using a spatula.
  8. Fill the plate. Pour the mixture into the prepared pie plate and sprinkle the remaining Parmesan cheese and fresh herbs over the top.
  9. Bake to perfection. Bake for 35–40 minutes until the center is set and the top is golden brown and crackling.
  10. The finish. Let the pie rest for 5 minutes before slicing to allow the custard to firm up.
