Ingredients:
- 2 large zucchini (approx. 1.5 lbs / 680g)
- 1 tsp (6g) kosher salt
- 1 tbsp (15ml) extra virgin olive oil
- 15 oz (425g) whole milk ricotta cheese
- 1 large egg, beaten
- 1/2 cup (50g) grated Parmesan cheese
- 2 cups (60g) fresh baby spinach, finely chopped
- 2 cloves (6g) garlic, minced
- 1/2 tsp (1g) black pepper
- 1/4 tsp (1.5g) red pepper flakes
- 2 cups (480ml) marinara sauce
- 1 1/2 cups (170g) shredded mozzarella cheese
- 1/4 cup (10g) fresh basil leaves, torn
Instructions:
- Slice the zucchini lengthwise into thin ribbons (about 1/8 inch / 3mm thick).
- Lay the slices on paper towels and sprinkle lightly with salt. Let them sit for 10–15 minutes to draw out moisture.
- Blot the slices firmly with more paper towels to remove the beads of water.
- Brush the zucchini slices lightly with olive oil to prevent sticking.
- In a medium bowl, combine the ricotta, beaten egg, and Parmesan cheese.
- Fold in the finely chopped spinach, minced garlic, black pepper, and red pepper flakes. Stir until the mixture is uniform.
- Pour about 1/2 cup (120ml) of marinara sauce into the bottom of a 9x13 inch baking dish and spread it evenly.
- Lay a zucchini slice flat and spoon 1–2 tbsp (15–30ml) of the ricotta mixture onto the wider end of the slice.
- Gently roll the zucchini around the filling and place it seam-side down in the baking dish.
- Repeat the process until all zucchini slices are rolled and the dish is filled.
- Top with the remaining marinara sauce and shredded mozzarella cheese.
- Bake for 30 minutes at 375°F (190°C) until the cheese is golden and bubbly.
- Garnish with torn fresh basil leaves before serving.
