Ingredients:

  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1.5 lb boneless chuck steak, sliced into thin strips against the grain
  • 2 tbsp neutral oil

Instructions:

  1. Pat the boneless chuck steak dry with paper towels.
  2. Identify the direction of the muscle fibers (the grain) and slice the beef into thin strips, roughly 1/4 inch thick, cutting perpendicular to those fibers.
  3. In a large bowl, whisk together the olive oil, lime juice, garlic, and spices.
  4. Toss the beef in the marinade and let it sit for at least 15 minutes at room temperature.
  5. Place a cast iron skillet over high heat until the pan is wispy-smoking.
  6. Add 1 tbsp of neutral oil.
  7. Working in two batches to avoid overcrowding, add the beef strips in a single layer and sear.
