Ingredients:
- 3 tbsp olive oil
- 2 tbsp fresh lime juice
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1.5 lb boneless chuck steak, sliced into thin strips against the grain
- 2 tbsp neutral oil
Instructions:
- Pat the boneless chuck steak dry with paper towels.
- Identify the direction of the muscle fibers (the grain) and slice the beef into thin strips, roughly 1/4 inch thick, cutting perpendicular to those fibers.
- In a large bowl, whisk together the olive oil, lime juice, garlic, and spices.
- Toss the beef in the marinade and let it sit for at least 15 minutes at room temperature.
- Place a cast iron skillet over high heat until the pan is wispy-smoking.
- Add 1 tbsp of neutral oil.
- Working in two batches to avoid overcrowding, add the beef strips in a single layer and sear.
